Pasta zucchine grigliate e pancetta - Pasta grilled zucchini and bacon

Io: …………………………..

Today I want to start my post with a dialogue, a few days ago, between me and my mom.

Mom: this evening I will arrive late, can you cook dinner for us?
Me: yes
Mom: Make pasta!
Me: okay
Mom: for Dad and me the sauce is ready, and you will eat pasta in white
Me: ………………………….

Ok, I'm intolerant to tomatoes, ok I'm intolerant to olive oil, but the pasta in white I can't!

So I equipped myself and I prepared a pasta with bacon and grilled zucchini. Here's the recipe!

Ingredients for one person (it's only me that I can't eat the sauce!)
- 100 gr pasta
- 6 slices of grilled zucchini
- 75 grams of diced bacon

Process:
Put the pot with the water for the pasta on the stove and start with the preparation of the sauce.

In a saucepan with a little oil, put the bacon and sauté over low heat for three minutes. Cut the grilled zucchini into small rectangles and add them to the bacon. Sauté everything for another three minutes and the sauce for the pasta is ready!

When the pasta is cooked, drain and add it to the pan with the sauce, cook for a minute and ... ready! It was really good! Better than white pasta!

Pasta zucchine e gamberetti - Pasta zucchini and shrimp

Last night I was in a hurry, no time for cooking and refrigerator semi empty! The best solution in these cases is a nice plate of pasta with tomato sauce.. The problem is that I'm intolerant to tomatoes and then I had to say goodbye to all the "red" sauces and I had to create a series of sauces without tomato.

Going back to yesterday's dinner in the fridge I had a pack of shrimp and then I went in one of the most beautiful places in my house: my dad's vegetable garden! In this period we have a daily production of zucchini and we are cooking them in many ways! This is why you'll often see dishes with ingredients like zucchini, all my recipes are influenced by our current production.
The dish came very good and it is really easy to prepare, here's the recipe and enjoy!

Ingredients (for two people):
200g of pasta “penne”
2 medium zucchini
A pack of shrimp

Process
Put water on the fire to prepare pasta.
Cut the zucchini and sauté in a pan with a little olive oil (I am intolerant to olive oil so I used seeds oil ). Simmer until they are golden brown.
When the water is boiling cook the pasta for the time indicated on the package.
Open the pack of shrimp and put them in a pot in which you'll add, when ready, pasta and zucchini.
…ready!
Let cool a few minutes before you eat, it's even good.

Buonissimo!

In my house we have a great deal of mint, very little used. Apart from use as a decoration of a few dishes or to make mojitos during barbecue, we don't use it.
Yesterday evening I decided to make an experiment, successful , because the results is really tasty. I made a mint syrup!
I’m really satisfied about result, with a few ingredients and in three steps the recipe was ready!
I used the minimum quantity of ingredients, because I didn't want to risk, and because it's useless to prepare in larger amounts than what then I will use.
And so, in this way everyone can do it..it will happened to you to buy in the supermarket  those little cute seedlings that are in a vase, to have after some weeks a nice bush of mint that you do not know how to use.
By  now you know what to do!

Ingredients
45 grams of mint
60 grams di of sugar
200 ml of water

Process
Pick up the mint (as you can see I have a considerable amount!)
Remove the leaves from the branch and wash
Puree the leaves
When the water boils, add the chopped mint leaves and cook over medium heat for about 40 minutes.
After 40 minutes turn off the burner and let it sit until it has cooled.
Filter it with the help of a gauze or a colander and you will get the syrup!
I do not know how it will be your mint syrup but mine is really good, dense and not too sweet, even the smell is delicious.
I'm thinking that I could also use it as a condiment for a  some dish  ... I'll try!
In the meantime, you have to try to make the mint syrup! delicious!

Biscotti della mamma senza latte, uova e lievito Mum's cookies without milk, eggs and yeast

And so the recipe that made me go out from the intollerances “crisis”: Anto’s cookies (my mum!) easy to make and successful.
Actually this is the most wanted recipe in my house, before I had all “restriction” caused by intollerances, so who turn up their noses thinking that these cookies are tasteless, they're wrong, try to believe!
We often make these biscuits because they are very simple to do and really tasty. And thanks to them my doubts on what to eat at breakfast disappeared!
Ingredients from original recipe are without eggs and without milk, I adapted the recipe and now is also without yeast.
What could be better? There will swell less than the tummy!
Ingredients
500 g of white flour
1 cup chopped nuts
1 cup semisweet chocolate or raisins
1 cup of sugar
1 glass of Vin Santo or Porto or Marsala
1 cup of oil
1 little spoon bicarbonate

Processplace in a bowl  the flour and baking soda, chopped almonds and add with all other ingredients.  You will have a "homogeneous ball".
Take dough with your hands or with a tablespoon and into balls and arrange without crush them on the baking sheet, so they will appear "rustic".

Bake at 180° for about 30 minutes and voilà cookies are ready!

Perfect for breakfast, snack, to bring visiting friends or to the office (as I do for a snack!)
What do you think of these cookies for intolerant?
