Pasta con sugo olive e mandorle - Pasta with olives and almonds
25 gr mandorle
Pronta in pochissimo tempo e gustosissima!
Here we go again, the scene was repeated: pasta with fresh tomatoes sauce for my parents, and white pasta for me. That's not good, and above all there was not much else in the house to use to make a good sauce without tomato. So I created this alternative sauce, which has proved very good and simple to prepare. Here's the olive and almond sauce!
I'm not crazy, it's really good!
Ingredients for two people:
200 grams of pasta
90 grams of olives
25 grams of almonds
oil: olive oil if you tolerated, seed oil if like me you are intolerant
Process:
While you prepare pasta, put in a blender olives, almonds and a drizzle of oil. Whisk and the sauce is ready! If you want a creamy gravy whisk it a lot, I wanted a little crunchiness by the almonds and I have not completely whisk. When pasta is cooked, drain and add the sauce!
Ready in a few minutes and yummy!

Troppo buoni!
This recipe has explained to me by the chef of a hotel in which I was to work. I liked it so much that I could not resist to ask to explain me how to prepare it.
I gave this name, maybe strange, to the recipe because the chef in question has a Michelin star.
It is about creating a preserves of tomatoes, and you can use it in various ways. The tomatoes I had eaten was between two pieces of buffalo mozzarella, but are also perfect on toasted bread or as a sauce for pasta.
The result is great!
Ingredients:
650 grams of cherry tomatoes
salt
sugar
oil, seed oil for me, if you tolerate it, olive oil is perfect!
chopped sage and rosemary
Process:
Arrange the tomatoes on a baking tray and sprinkle with olive oil, salt, sugar, sage and rosemary. There are no precise amounts, go to the eye.
Mix the ingredients together and put in the oven at 100 ° for two hours.
Once "withered", turn off the oven and put cherry tomatoes in a glass jar for preserved.
Cover with oil and close the lid. For sterilization, wrap the glass jar with a cloth, put it in a deep pan filled with water and boil for 20 minutes.
Too tasty!

You know those fantastic aperitif with hundreds of pizzas and focaccia, plain or stuffed, at your disposal for a big snack? Good is not it? Too bad I can not eat them because of my intolerance to yeast. And to think that I love focaccia!
So, after a meeting with friends during which I could only watch them eating, I started work and I made a delicious unleavened focaccia!
It was easier than I thought, thankfully, because I was really hungry!
Here's the recipe! Enjoy!
Ingredients
250 grams of flour
½ teaspoon baking soda (the spoon should be small)
3 tablespoons olive oil, seed oil for me, if you tolerate it, olive oil is perfect!
150 ml of warm water
Process
In a bowl add the flour and baking soda and mix together these two ingredients. Add the warm water and oil. The dough is ready!
It will remain very "soft" don't worry, it must be so.
Put your dough on a baking sheet, I always use those in silicone, and cover with a little olive oil and a little bit of salt.
I added a few leaves of rosemary.
Bake at 180 degrees for 30 minutes and ... enjoy!
I stuffed a part of focaccia with ham!

A parte
adesso sapete cosa fare!
Ingredienti
45 gr di
menta
60 gr di
zucchero
200 ml di
acqua
Procedimento
Buonissimo!
In my house
we have a great deal of mint, very
little used. Apart from use as a decoration of a few dishes or to make mojitos
during barbecue, we don't use it.
Yesterday
evening I decided to make an experiment, successful , because the results is
really tasty. I made a mint syrup!
I’m really
satisfied about result, with a few
ingredients and in three steps the recipe was ready!
I used the
minimum quantity of ingredients, because I didn't want to risk, and because
it's useless to prepare in larger amounts than what then I will use.
And so, in
this way everyone can do it..it will happened to you to buy in the
supermarket those little cute seedlings
that are in a vase, to have after some weeks a nice bush of mint that you do
not know how to use.
By now you know what to do!
By now you know what to do!
Ingredients
45 grams of mint
60 grams di of sugar
200 ml of water
Process
Pick up the
mint (as you can see I have a considerable amount!)
Remove the
leaves from the branch and wash
Puree the
leaves
When the
water boils, add the chopped mint leaves and cook over medium heat for about 40
minutes.
After 40
minutes turn off the burner and let it sit until it has cooled.
Filter it with the help of a gauze or a colander and you will get the syrup!
Filter it with the help of a gauze or a colander and you will get the syrup!
I do not
know how it will be your mint syrup but mine is really good, dense and not too
sweet, even the smell is delicious.
I'm
thinking that I could also use it as a condiment for a some dish
... I'll try!
In the
meantime, you have to try to make the mint syrup! delicious!

Biscotti della mamma senza latte, uova e lievito Mum's cookies without milk, eggs and yeast

And so the recipe that made me go out from the intollerances “crisis”: Anto’s cookies (my mum!) easy to make and successful.
Actually this is the most wanted recipe in my house, before I had all “restriction” caused by intollerances, so who turn up their noses thinking that these cookies are tasteless, they're wrong, try to believe!
We often make these biscuits because they are very simple to do and really tasty. And thanks to them my doubts on what to eat at breakfast disappeared!
Ingredients from original recipe are without eggs and without milk, I adapted the recipe and now is also without yeast.

What could be better? There will swell less than the tummy!
Ingredients
500 g of white flour
1 cup chopped nuts
1 cup semisweet chocolate or raisins
1 cup of sugar
1 glass of Vin Santo or Porto or Marsala
1 cup of oil
1 little spoon bicarbonate
Processplace in a bowl the flour and baking soda, chopped almonds and add with all other ingredients. You will have a "homogeneous ball".
Take dough with your hands or with a tablespoon and into balls and arrange without crush them on the baking sheet, so they will appear "rustic".
Bake at 180° for about 30 minutes and voilà cookies are ready!
Perfect for breakfast, snack, to bring visiting friends or to the office (as I do for a snack!)
What do you think of these cookies for intolerant?
