Mousse carote, patate e noci - Mousse carrots, potatoes and nuts

Scrigno di sfoglia con porri - Casket of pastry with leeks
Una ricetta facile da preparare, per un pasto leggero ma molto gustoso.
Ingredienti per due persone:
un rotolo di sfoglia rotonda
due porri
50 gr di formaggio Emmental
Per la besciamella:
un cucchiaio di farina
350 ml di latte
Procedimento:
Pulite e lavate i porri e sbollentateli in una pentola. Dopo averli scolati fateli saltare con un filo d’olio e aggiungete sale e pepe a piacere.
Per la besciamella mettete in una pentola un cucchiaio abbondante di farina e, a fuoco lento, aggiungete il latte continuando a mescolare finchè non avrete ottenuto una consistenza “cremosa”.

Mescolate la besciamella, i porri e il formaggio. Aggiustate di sale e aggiungete un pizzico di pepe.
Prendete una teglia e adagiatevi la pasta sfoglia, bucherellate con una forchetta la base, aggiungete gli ingredienti preparati e chiudete la sfoglia.
Cuocere in forno ventilato a 180° per 30 minuti
Ingredienti per due persone:

Pasta con caprino e pistacchi - Pasta with goat cheese and pistachios
Veloce e buonissima!
Cuocete la pasta e, una volta scolata, aggiungete un filo d’olio e un caprino. Mescolate in modo che il caprino si sciolga e impiattate. Prendete dei pistacchi, sbucciateli, tritateli con un coltello e metteteli sopra la pasta.Io ho fatto una porzione in più e l’ho gustata durante il pranzo in ufficio!

Pasta con sugo olive e mandorle - Pasta with olives and almonds
Ci risiamo, la scena si è ripetuta: pasta al sugo con pomodori freschi per i miei genitori, e pasta in bianco per me.
Non ci siamo, e soprattutto non c’era molto altro in casa da poter utilizzare per fare un buon sugo senza pomodoro. Ho quindi creato questo sugo alternativo, che si è dimostrato buonissimo e semplice da preparare. Ecco a voi il sugo olive e mandorle!
Non sono impazzita, è davvero buono!
Ingredienti per due persone:
200 gr di pasta
90 gr di olive
25 gr mandorle
olio: d’oliva se lo tollerate, di semi se come me siete intolleranti
Procedimento:
Mentre preparate la pasta, mettete in un mixer le olive, le mandorle e un filo d’olio. Frullate e il sugo è pronto!
Se volete un sugo cremoso frullatelo molto, io volevo si sentisse un pochino la croccantezza delle mandorle e non l’ho frullato completamente. Una volta che la pasta è cotta scolatela e unite il sugo.
Pronta in pochissimo tempo e gustosissima!

Process:

Conserva di Pomodori - Pomodori Stellati - Starry Tomatoes
Questa ricetta me l’ha spiegata lo chef di un albergo nel quale ero stata per lavoro. Mi era piaciuta talmente tanto che non ho resistito dal farmi spiegare la preparazione.
Ho dato questo nome, forse strano, alla ricetta in quanto lo chef in questione ha una stella Michelin.
Si tratta di creare una conserva di pomodorini, da poter utilizzare in svariati modi. I pomodorini che avevo mangiato io erano adagiati tra due pezzi di mozzarella di bufala, ma sono perfetti anche sulle bruschette o come condimento per la pasta.
Il risultato è ottimo!
Ingredienti:
650 gr di pomodorini
sale
zucchero
olio, per me olio di semi, se voi lo tollerate l’olio d’oliva è perfetto!
salvia e rosmarino tritati
Procedimento
Disponete i pomodorini sulla teglia del forno e cospargeteli con olio, sale, zucchero, salvia e rosmarino. Non ci sono quantità precise, andate a occhio. Come si dice? Qb! quanto basta.
Mescolate gli ingredienti tra loro e mettete in forno a 100° per due ore.
Una volta “appassiti”, spegnete il forno e mettete i pomodorini in un vasetto di vetro per le conserve.
Coprite con olio e chiudete il coperchio.
Per la sterilizzazione avvolgete il vasetto o i vasetti di vetro con un panno, mettetelo in una pentola alta piena d’acqua e fate bollire per 20 minuti.
Troppo buoni!

It is about creating a preserves of tomatoes, and you can use it in various ways. The tomatoes I had eaten was between two pieces of buffalo mozzarella, but are also perfect on toasted bread or as a sauce for pasta.
The result is great!
Ingredients:
650 grams of cherry tomatoes
salt
sugar
oil, seed oil for me, if you tolerate it, olive oil is perfect!
chopped sage and rosemary
Process:
Arrange the tomatoes on a baking tray and sprinkle with olive oil, salt, sugar, sage and rosemary. There are no precise amounts, go to the eye.
Mix the ingredients together and put in the oven at 100 ° for two hours.
Once "withered", turn off the oven and put cherry tomatoes in a glass jar for preserved.
Cover with oil and close the lid. For sterilization, wrap the glass jar with a cloth, put it in a deep pan filled with water and boil for 20 minutes.

Morbegno in Cantina - Eventi di gusto – viva l’enogastronomia! - Events of taste - long live the food and wine!
Oggi vi voglio parlare di una manifestazione che si terrà tra poche settimane e alla quale partecipo sempre molto, molto volentieri. Si tratta di “Morbegno in Cantina”, evento ideato per degustare i vini prodotti sul territorio.
Il format è semplice e molto suggestivo: acquistando un “pass” avrete la possibilità di entrare nelle cantine in cui il vino viene custodito e degustarlo, accompagnato da prelibatezze locali quali formaggi e salumi.
Potrete scegliere tra cinque tipologie di percorsi e, grazie a una mappa che vi verrà fornita, sarà facilissimo spostarsi da una all’altra. E il vino che degusterete vi verrà versato in un bicchiere con logo della manifestazione, fornito insieme ad una piccola sacca per trasportarlo.
L’atmosfera è veramente bella, così come le cantine in cui si entra. E tra le vie del paese potrete visitare le bancarelle o mangiare alcuni piatti tipici valtellinesi. Io non resisto mai dal prendere i pizzoccheri e gli sciatt!
